Sourcing in Morocco

Morocco is the origin for everything in this catalogue. This page explains what that means in practice, and what is established per ingredient rather than claimed in general.

Why material comes from Morocco

Morocco spans several distinct growing environments within a short distance: an Atlantic coastal strip, the Rif in the north, the Middle and High Atlas ranges, and the arid pre-Saharan south. Altitude ranges from sea level to well above 3,000 metres, and rainfall varies sharply between the northern mountains and the south.

That range is why the country supports botanical species — some cultivated, some gathered from wild populations — that are difficult to obtain consistently from a single origin elsewhere.

Cultivated and wild-harvested material

Botanical raw material is either grown as a crop or gathered from wild populations. The two behave differently: cultivated material tends to be more consistent between batches, while wild-harvested material is tied to the season and the site it came from.

Which of the two applies is a property of the specific ingredient, and is confirmed at enquiry.

Seasonality

Harvest windows differ by species and by plant part. A flowering top, a leaf and a root from the same plant are not available at the same time of year, and a distilled material depends on the harvest that feeds the still.

Where availability is seasonal for an ingredient, that is stated on the ingredient page and confirmed in the quotation.

What is confirmed for each order

  • The botanical identity of the material, and the plant part supplied.
  • Whether it is cultivated or wild-harvested.
  • The process used, where the material is distilled or extracted.
  • The harvest window the consignment comes from.
  • What documentation exists for that ingredient.

These are agreed before a quotation is issued, and recorded in it.
