Wormwood is a bitter aromatic with a long history in beverage flavouring and a narrower position in fragrance. It is bought for the bitterness and the herbaceous depth, not for softness, and it is dosed accordingly.

Thujone content in wormwood materials is capped in food and beverage applications at levels that differ by product category and by market — bitters, spirits and lower-alcohol drinks are treated differently, and some markets are considerably stricter than others.
